would anybody know what kind of plastics in sheet/film form you would use for making springs?

Acetal copolymer is a very good spring material. Please visit one of the big acetal makers' websites like Ticona or BASF or others.
 
It is also possible to use TFM material for springs, for more information You need to contact Dyneon in Germany (Kelsterbach)
 
I agree that acetal is a good spring plastic.

But I want to add that plastic springs should be used with caution. Plastic is ok for springs that will be under load only briefly, as in a spring that snaps a switch from one position to the next. Long term loading should be avoided sinc ANY plastic will "relax" in time.
