PHOTOTRANSISTOR SENSORS

Phototransistor sensors usualy fixed to machines or handler usually will compromise of of two items one phototransistor and emiter diode. Can anyone kindly explain how it works or working principle.

Is there any simple circuit that we can fabricate to control its senstivity.
