Any reasons why galvanize steel fittings could not
be substituted for regular steel fittings used
on black pipe?
This is a do it yourself homeowner question.

In your case none what so ever

Check your local gas code requirements. Some jurisdictions do not permit the use of galvanized pipe & fittings.
