Why do we define the compression only or tension only springs as non-linear springs?

Because linear springs have the same stiffness in either direction of load.
 
Support ===> is basically an Elastic Soil, their physical model is Winkler Spring Model
Truss member ===> is basically an Elastic member with stiffness K=EA/L, their physical model is Spring Model
..
in the 1st type ---> we use compression only spring model (since soil posses no tensile properties)
in the 2nd type ---> we use tension/compression since truss member capable of elongation or shortening due to applied force.
