How is "joist shoe depth" related to the stability or any other structural related concept? Is there any minimum and maximum limits for shoe depth?

By joist shoe depth do you mean the depth at end bearing. Nominal capacity depths at end bearing are usually 2.5". Heavier joists have deeper sections. Check the suppliers joist catalog. (they usually are free in print or at least available as a free download from their sponsoring website)

Check in Vulcraft's "Designing with Steel Joists, Joist Griders, and Steel Deck" by Fisher, West, and Van De Pas. It takes you through joist design and special considerations such as retrofit and other special design issues. I have found it very helpful and the new edition, 2nd, is only about $15.
