How can I creat a 'Dihedral' chamfer onto the end of a pipe?

Sounds like you will have better control of this using a revolve cut instead of a chamfer feature. The sketch of the revolve will allow you to keep the chamfer centered.
 
I don't think a revolve-cut will work. Looks like a job for an in-context cut or an Indent feature.

Spoke too soon w/o looking at picture! [blush]

Sweep w/ guide curves should work. Unfortunately, explaining is difficult (probably more difficult than the actual feature).
