In the dimension prefix dialog, you can press
Shift+Enter in the Subfix field to do a Carriage return.
It is displayed as a "|" character in that field.

Is there a way in Visio 2000 to convert text to outlines? that is, to convert a chosen line of text into lines and arcs that preserve the text's appearance, but is no longer editable text.
Either the Geometry is grouped, or the elements that make up the drawing are in a drawing view. right click on a line and see if you can select "draw in view" this should allow you to select individual elements.
