Dynisco makes sensors specifically for melt pressure sensing. I would look at their catalog. From what you say you are interested in, I believe something should be standard.
Try looking at PT46xx series (pg78 in 5th edition catalog)

What about using a PC or laptop to interface using Parker's software? Maybe you could then make a simple HMI application using VB to control only what you would want changed.
If I remember the software is not too complicated and runs in Windows or Dos.
