what exactly are you trying to determine for the design? hydrodynamic considerations? probability of fish attention? (start with a spherical fish....) lol. if there are hydro considerations, a basic fluid mech textbook should provide you with any info that you need...
I do not know if there is a set process already developed for this purpose (outside of medical uses), but I imagine that one could be made. The largest setback is the distance from the transducer, and transducer size to generate enough power to set up the complimentary waves to crush your rock...
